At what point is it too old?

I realized have have some bresaola, lomo and a couple of other 2+ year old charc in the back of the fridge. It's been vac packed at fridge temps that entire time, occasionally opened to serve and then resealed.

How long do you consider it viable?
 
Different deal , because this was in Pink paper . Snapped like a twig , but sure smelled good .
Trashed it because I wasn't sure about the mold being safe or not .

Would be interested in the texture of the stuff you found , how dry is it .

As far as texture and flavor, there has been no degradation of either. None of them have spent more than 15 minutes outside of a vacuum at any point in the last two years.

I will proactively start making more boards though :)
