Hello, got a new electric smoker today and ran across this forum in the process of attempting to figure some basics out about it.  I've never smoked on electric smokers before today but have plenty of experience in the smoking world.  My family has been big BBQ/Smokers for many years.  My dad and brother are insane about smoking and have participated in several KCBS competitions.  I've tagged along for 3 or 4 of them, but mainly just to eat :)  Anyhow, hope to get some good ideas/give some good ideas on here.
