Interesting comparison. I have had some hardcore Mesquite Smoked Texas Brisket, low and slow, naked. Pretty intense stuff. Got to go with Paper and Pecan to feed the masses around here...JJ

I've done all three ways also, and have decided that paper is the way to go. It's messier, but worth it for the flavor.
 
Hmmm... Decisions, decisions. I like the idea of foiling, and the paper in intriguing, but I also like adding some foiling juice, which I don't think would work with paper.
