Going to my Mothers for Easter dinner. Made a few things to take and decided to make some armadillo eggs as well.
Most of my family members enjoy smoked foods occasionally but only my Brother and myself are crazy over it.
I'm hoping these little gems will give them something delicious to think about.

Unlike your "traditional" armadillo eggs these ones are stuffed with pepper shooters. A cherry pepper stuffed with provolone and proscuitto then marinated in olive oil. Besides turkey legs these are my favorite thing to smoke.

Got some nice pepper shooters from the cold bar at our local Shoprite. Also picked up a few Bob Evans sausages on sale for $2.99 as opposed top the normal $3.49



I let the peppers drain and then sit for a few minutes, the oil can make them hard to wrap...



I was going to do half Italian and half regular but I just decided to mix the sausages together. Here they are out of the freezer (from firming up) and ready to go on the smoke...



I'll update as they cook and again once they come off.

Those look Awesome. Are the stuffed peppers contained within the Sausage?
 
Yes, I wrap the sausage around the pepper shooters. It can be kind of time consuming and a lot of times the sausage doesn't want to cooperate with the oil on the peppers, but once you cup and connect the sausage near the top they form very nicely... this is a pic from last time I made them showing how I form it around...



Ok, now the finale of these ones...

Pics are after they cooled on the whole ones but they looked good just the same...



Cut one open after I had smoked them but was so happy about making them I forgot to take the picture, so this is one later on tonight that I nuked...
