I was out of chuckies but I had a arm roast.

Seasoned with SPOG.


Mini loaded with Trader Joe's hardwood briqs and pecan.


Here it is at 2 hours.


At 4 hours it looks alittle dry so I put in a pan with beef broth and foiled.


Check in a hour, hope she is ok.
 
 
I think the braise will make that for you!

1 hour in foil really helped it get tender.

Resting in foil now.

Looks tasty Adam! What I've been doing lately is cold smoking mine and then cooking them in my cream can cooker. Get the best of both worlds. Smoke and super tender goodness!!!

For newbies?

Case is an experienced smoker.  He knows that a short cold smoke on uncured meat is safe only if the meat is taken to a proper temp within a window of time.

I am certain he was not doing the long cold smokes we could do on cured meat.

It is important to know the food safety guidelines when we cook at low temperatures.

I eat some weird stuff. Can't bring myself to try marrow.
