I own a 20" Offset That I made, a 20" Oklahoma Joe That I am making changes too, and several Other Custom smokers.

The largest I ever Owned was 48" X 12' Named Smoke'Zilla

I am By No means a pro, But I have cooked my fair share, I have ruined some too. Once I used Cavenders and another spice ( followed a BBQ sites Recipe) On 10 Bags of Thigh and leg quarters It was so salty No One would Eat It!! I mean Not even My Chocolate lab He Literally Turned His Nose UP!!.. But I took the skin Off Boiled It It Plain water for 10 Mins  added Black peppercorns and a few bay leaves  along with 3 sugar canes about 12" Long  and Pulled It all from The None the Next morning Making Chicken Salad That EVERYONE ate .. so  It wasn't a total loss
