Are My portions correct?

Doing Pulled pork, beans and slaw for 50 friends this weekend and would like input on portion size from folks that have been there. Im figuring between 1/3 and 1/2 per portion on the pork at 75 servings since some will eat seconds and some will not. As far as he beans and slaw I am figuring 5oz servings of each for 75 also. Will 3 heads of cabbage do it? Too much? Not enough? Hope some of you will chime in! Thanks!
 
Fat Dog, morning.... I'll bump this thread....  Maybe a caterer will help with your question....  All I do know is I had pulled pork sammies tonight and put slaw on the sammies and had beans on the side.... Sounds like you have the perfect menu ready to go....   Dave  
 
Your portions are pretty Big. 4-6 oz portions of PP is plenty. Typically figure 1lb finish PP feeds 3 people. Butts have a 50% yield. 75 X 5oz X 2  /  16 = 47lbs raw Butts. Use Hamburger Buns. Also 2-3oz serving of Coleslaw are typical. At 2oz Cabbage for 3oz of Coleslaw, 75 portions would require about 10lbs of Cabbage so if the heads are large, three will get it done. 5oz of bean, 1/2Cup is a portion so you are good here...JJ

Hey Jimmy thanks a million! I may have to get another butt to throw on cos I have arond 40 pounds in the fridge now. Beans and slaw I am good to go.

Ok guys heres the pics I promised. 8 seven pound butts cooked on 6-29-30. Took about 12 hours for 5 of them and around 14 for the other 3.
 
They look great, no big deal but from the looks of the pics, you did not rotate the Butts so none are always close to the fire. Unless the Smoker has a Baffle and Tuning Plates to even out the heat across the grate, you will find rotating every 1-2 hours will let all the butts cook to the same temp at about the same time...JJ
 
Jimmy I did and I didnt. I rotated the ones on the ends of the smoker. The ones in the middle I left where they were. But you are correct that they got done at different times. 4 at the same time and the other 4 one at a time. Kind of a pain but the food was great!
