If you reduce the butter/brown sugar mixture after sautéing the apples, you can get a nice caramel sauce to pour over the apples (and the pork loin) that would be very nice.
Another option is to mix some cherry juice (get a can of dark cherries in light syrup and puree it in a blender) in with the butter/brown sugar after sautéing the apples and then reduce that. I love this kind of cherry glaze on my pork loin and pork chops.
Easy and good, buy a can of Apple pie filling, heat it up with raisins, pecans and a little spiced rum, reduce down a little or till the pecans are slightly softened.
Its easy and you'll be surprised how well it goes with pork.
Fry your apples and smoke your pork loin and then throw them all in the crock pot with some brown suger and other stuff you wanna add and let it go for a couple hours and its amazing.
