ANyone have a great marinade for steaks to be cooked over an open fire?

Looking for a recipe for a marinade to put some eye of round steaks in that will be cooked over a camp fire.

Any one care to share?

I just use Dale's.  It's sold in stores around here and I love the taste. 

When I cook over an open fire, I don't actually cook 'over the fire'.  I get a nice fire going to produce a bed of coals, then take some coals off to the side and cook on a grill.  I ensure I have an indirect side and direct side so I can move the steak to get it to temp then a sear. 
 
I have used this on Steak, Chicken and Pork Chops...JJ

Teriyaki Marinade and Grilling Sauce

1C Low Sodium Soy Sauce (Kikkoman Green Cap)

1/2C Mirin or other Wine

1/4C Brown Sugar

2T Rice Vinegar

1T minced Garlic

1T minced Ginger

2ea Scallions

1tsp Sesame Oil

Hot Pepper Flakes to taste

Combine ingredients and Marinate meat overnight.

To use as a Basting/Grilling Sauce, bring the marinade to a simmer and reduce until desired thickness.

Brush on grilling meat but watch for burning.

here is one of my favorite marinades for lean steaks

Ingredients
  • 3 tablespoons tequila
  • 1 teaspoon grated lime rind
  • 3 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1¼ teaspoons MCCORMICK Gourmet Collection Chipotle Chile Pepper
  • 1 teaspoon MCCORMICK Gourmet Collection Mexican Oregano Leaves
  • ¾ teaspoon freshly ground MCCORMICK Gourmet Collection Black Peppercorns
  • ½ teaspoon MCCORMICK Gourmet Collection Ground Cumin
  • ½ teaspoon kosher salt
  • 2 teaspoons minced garlic
  • 4 (1-inch-thick) BEEF Top Sirloin Steaks (about 6 oz. each)

Directions

1. Stir together first 10 ingredients in a large bowl until blended. Trim fat from steaks; add steaks to marinade, turning to coat. Cover and chill 8 hours, turning occasionally, or, if desired, let stand at room temperature up to 2 hours.

2. Remove steaks from marinade. Bring marinade to a boil in a small saucepan over medium heat, and boil 2 minutes.
#

3. Heat a grill pan coated with cooking spray over medium-high heat. Grill steaks 5 to 6 minutes on each side or to desired degree of doneness, basting occasionally with marinade.

4. Remove steaks from grill pan, and place on a serving plate. Dollop each with Guacamole Butter. Spoon Fiesta Black Bean Salsa around steaks, and serve immediately with remaining Guacamole Butter.
 
I poor soy sauce in a dish and lay a steak in it for 10 minutes and flip for another 10 min... Thats it... on the grill it goes......  I'm making myself hungry.......

If it's decent flavored steak, why cover up the flavor with a bunch of strong stuff???? I don't get that! Anyway, I definitely wouldn't cook it (eye of round steak) for very long or It'll be like a Michelin tire!!!
Finish with a little smoked butter or the like, better yet, get a good steak and finish that with some smoked butter!!!!!

Just my 2 cents and as always YMMV!!!

I poor soy sauce in a dish and lay a steak in it for 10 minutes and flip for another 10 min... Thats it... on the grill it goes......  I'm making myself hungry.......
