Anyone around Seattle area?

I’m new to the Seattle area and looking for a place to buy a brisket flat. Costco seems like the only place I’ve seen briskets and it’s always the whole thing. I’m not really sure how to break them down.

Any help would be greatly appreciated.

There are a ton of videos out there on trimming and separating a whole packer brisket. Here's one...


I'm on the opposite side of the country so no help on where to buy brisket from a small local butcher, but Costco or Sam's Club would be my first thought for a big box store.
