Been looking at these knives quite a bit because I want something non-stainless. The 1095 high carbon steel should be just fine for my needs.

They're not going to win any beauty contests but they've been around forever and seem to last that long too.

Any fans? Any comments?

Hey Dan.......I have 4 left that my uncle gave me about 30 years ago. I oil the handles maybe every two years but the still look good.

Do you use them quite a bit? Do you like them?

The new ones are so low priced that it's amazing. Yeah, some people say you only get what you pay for but sometimes you're paying for the name more than the product.

I don't need a $150 knife to slice tomatoes and cut up meats and vegetables. I wish they still made the Old Hickory 8" French Cooks Knife but the other knives will do what I need.

They're made in the US so I think I'll get a few.

I'm becoming a minimalist with my cooking equipment. I'm buying US made Lodge cast iron too which is about as inexpensive as one can get and still be buying a good product. Besides, it's not like I'm making my living as a chef. :)

I too wish they made a plain chefs knife, but I've been eying the 7" butcher knife at the local hardware store for a while now. For less than the price of a martini around here, I figure I can't go wrong.
