3 rib roast , never checked the weight ..., air dried in fridge with kosher salt for 24hours , then in the smoke (cherry) at 220 for a hair over 4 hrs to an internal temp of 135, rested a half hour ....also did Jimmy's au jus which came out great ... Meat was incredibly tender !!!!
