I wanted to smoke a Turkey for thanksgiving but since my new smoker is to be a Christmas gift I decided to give it a try on our gas grill. When looking for a unmolested turkey all I found were breasts, so I got the biggest one they had. My plan was dry brine so I rubbed it down with kosher salt and left in fridge for 24 hours. Then I made some bacon butter. 1 stick butter 5 slices raw bacon and 2 tbls rub. Rubbed that under the skin then on the outside. let that sit overnight. Thanksgiving morning it went on one end of the grill while my cast iron smoker box with apple chips went on the other, directly on the heat spreader. That gave too heavy a smoke so I put the smoke box on the grate above the burner. nice looking smoke, I think. Took about 5 hours @285-300. Unfortunately guests began arriving early and I forgot to take a picture of the finished product, but here it is after lunch IMG_0452.JPG IMG_0455.JPG IMG_0457.JPG IMG_0458.JPG IMG_0459.JPG Everyone bragged on the turkey and If I do say so myself it was outstanding. Can't wait to get my real smoker going.
Also have to mention that my son prepared a herb rubbed turkey in the oven which was also really good
