Another St Louis Rib question?

Hi Just back from the local supermarket with 2 racks of St Louis ribs, both weigh 3 lbs. Here is the question on one rack the bones are straight up an down, the other rack the bones are at an angle, like this \.

I remember watching Pittmaster this week and all the the ribs, the bones were straight up an down.What gives?

Also remember Johnny Trigs use a glaze of butter/honey/some rub and another thing I just can't remember, what IT was?

It is hard to find straight bones you really have to look for them trust me i cook a lot of ribs. His other secret ingredient is Tiger Sauce and brown sugar.

You will find most of those cooks get there meat from specialty stores.  Restaurant Depot is a great place to find straight bones in ribs.  The ribs your grocery stores get are usually crooked because they get the cheep est they can buy.  The best ribs in my rear is at Sams but still two out of three are crooked ribs.  The older the pig the more of an angle you will see n the rib.  It it hard to find straight ribs yes imposable no. 

These are from SAMS club the top rack is crooked the bottom rick straight bones..
