The 1st one came out great I figured I would try another while I was smoking Debi's Crisp-X Mix.

After about 3 hours

Done

Very Moist


I also tried a new treat..
Bacon wrapped Turkey and Beef Kielbasi topped with 1 teaspoon Brown Surgar
The Turkey was outstanding.. Beef was good just not as good as the Turkey

Done

Sat I'm having a party and will be doing some of Dutches beans.
 
No, I don't think you need too if you use the bacon. But thats JMO.. I may try a brine one day just to see how it tastes..
Now Chicken I'll never cook another one unless it's brined.
 
You have to brine light if you don't want it to taste like Canadian bacon! Use half the salt too!
