Greetings fellow Smokers. My forum name is J Don and my full name is J. D. (Jeff) Caldwell. I have been grillin/chillin for as long as I can remember but I have only started cooking/smoking low and slow for approximately the last 5 years. I found this forum by accident this past March 3 but never got around to introducing myself. I am also a member of a couple of other forums devoted to cooking and grilling/smoking and I am learning something new almost daily. Thanks to everyone who shares their passion of cooking. To start out I am listing the following equipment that I have been collecting and I have to say that right now my favorite smoker is the Weber 22.5 WSM. This is a list of the others I have collected; Weber Smokey Joe, Weber 22.5 Silver, Weber 22.5 Performer, Weber 22.5 WSM, Char-Griller Super Pro w/Firebox (2), Kenmore Elite Gasser w/ Rotisserie, Cajun Cooker (3), Part owner of a trailer mounted horizontal offset, Maverick Redi-Check ET-73 Remote Smoker Thermometer and a Bluesman Splashproof BLUE Thermapen. I am also in the process of building 3 UDS's as they seem to be all the rage in another forum. Mine won't be quite so ugly as I am incorporating my favorite teams mascots/logo's on mine along with a few other goodies. I am to new to this forum and I have not seen anything on a UDS here yet but I'm sure I will. I am an Engineer Specialist with CSJFTC - Camp Shelby, MS, have 2 Beautiful Daughters, 1 Grandaughter and 1 Grandson, 1 Fine Harley FSXTD and my hobbies are Flying, Boating, Motorcycles, Scuba/Ex Commercial Diver and I love Grillin/Chillin.

Also for those of you new to smoking,  Get a good Probe Thermometer as we smoke by Temperature NOT TIME.
