A big HELLO to all here. My name is Sean and I am addicted to good food.  I love to prepare food as much as eat it. Nothing like seeing the look of pleasure on the face of someone as they take the first bite of something I have put so much effort into. I own a Traeger lil Tex and love it, smoked turkey, butts, loins, and backstraps are a norm around my house. The one thing I have never taken the time to do though is smoked sausage, salami, ect. That is why I am here, I have plenty of venison and freezer pork from pigs we raise. I love to learn and am looking forward to gaining knowledge and enjoying more good food. I would love to bring some homemade summer sausage to Thanksgiving or Christmas dinner. One question up front is with my smoker being smaller can I lay summer sausage on the grill grates? Or should I make something to tie both ends up and hang it sideways? Hail from NE Ohio.
