Born and raised in upstate NY, Adams Center, 10 mi. south of Watertown, dad had a meat market there, Fassett's Quality Foods, specialized in home cured and cob smoked hams, bacon... if it moved we cured and smoked it, lol Done a lot of fishing in Lake Ontario, Pulaski, Sandy Creek, Tug Hill North Woods in Montague county, etc. Now I'm lazy down here in Fort Worth Texas and go fishing with a friend who has a boat on Granbury Lake and others too. Crappies don't fight like smallhead bass but the flavor is good! Used to fish south Sandy Creek right after opening day if the water was low; the smallmouth would come up to spawn and get trapped, couldn't get back to the lake and wow, we'd have full stringers and big dinners!
Best thing to do is experiment a little and buy some good thermometers and monitor your smoking and cooking to get the right temps without overdoing it - keep good logs and tweak.. yeah, it's going to be rough experimenting all the time and having to eat your errors, but you won't mind... lol!
