Another Meat Church Pork Butt

Took off the money muscle for some kabanosy.

Meat Church again for the pellet smoker tomorrow.

In the smoker now, hope done by 6-7p

After I cut the money pard off for the kabanosy the butt is a tad over 5lbs.

It really starts at the market because some money muscles are smaller than others. This one is not too bad.

If you only isolate the money muscle you will only get small medallions, but if you make your cut a couple of inches behind the MM (a little farther than where my index finger is) you will pick up some additional muscles.

After smoking, this 'Coppa Roast' will have 2 or 3 muscle groups.

I've tried to find it before but then I found out that a lot of suppliers remove it before it gets bagged. Costco and Fred Meyers ones don't have it.

I always look, but have not found one in a Boston butt in 15 years. But... if you buy a whole shoulder, look extra close.

Years ago, Boston butts were cut a little more generous, in the 9# to10# range and you would find a gland on occasion. It's hard to miss.
