Well as my vacation comes to an end I decided to get in one last Saturday smoke before work Monday.. Woke up at 3 to get everything fired up. Rubbed the butt down last night, good thing because it has been sitting thawed in a freezer bag for about 5 days (faint fart smell) but still good (I hope). started it at 4 and it was cooking around 280 for the 1st few hours. It’s settled at 270 right now. Hopefully it will be ready around 4:30. Nice cool and misty morning too! Love mornings like this!

Was going to do the same thing myself but a thunderstorm rolled through just as I was getting up.At this point its going to have to wait till tomorrow.

I really need a covered cooking area!

Yea, I don’t really have an escape route if it comes down hard.. maybe get it on a sheet of wood and drag it under our giant American Chestnut Tree
 
Might be cooking it too fast.. it’s at 180 already... time to lower that temp to 225

As for a covered cooking area when my friend lived in the Country we frequently would use a Canopy Tent to cover the fire pit area and a grill when it rained. We just use additional tent stakes and paracord to hold it down better and actually ended up cutting some tarps and rigging up three sides to be enclosed for when it was needed. Worked well enough, though to this day we're all still surprised some how when we got drunk we didn't start the whole thing on fire.. ;)

Gonna make some pulled pork hash I think with the leftovers! That and hook friends and family up with it too since we won’t be eating it all. That’s normally what we do.
