After getting my ESS Bob sent in for nut removal surgery last Thursday I've become a prisoner in my own home babysitting the little rat. I got another 5lb load of lox smoked up and in the freezer, now we've got about 15lbs frozen and should be good for awhile. Can't post that, did the same thing a week back. Today I chopped out some single ribs from a rack and a half of beef ribs that I had frozen from making boneless ribeye steaks, ten ribs for meat sauce. Four jars of Classico sauce with garlic and onions, two cans of Hunt's tomato sauce with garlic, two cans Hunts diced maters, a nice splash of olive oil and about a half knob of garlic chopped up, a little basil in the pot. I had the ribs on low and covered for about six hours until the meat was FOTB, then cut up a half dozen of my Italian sausages to toss into the pot for another 2-3 hours

Doesn't make much sense to me to be making a meat sauce that doesn't have some meat on every fork full. Boiled up a half pound of rigatoni and covered it with my sauce, a little shredded parm, glass of cab for dinner.

Now I've got a rack of pork ribs all slathered with mustard

Rubbed and in the fridge

Tomorrow I'll fire up the offset SQ36 and smoke those pork ribs over some hickory splits, maybe drill a few Rolling Rocks, and watch some DVD flicks while I keep and eye on the TP-20. Bob's laying kind of low, he's under my desk right now.

We'll all feel a little better come noon Saturday, the E-collar comes off and we'll go to the park before a swim and a bath. RAY

All looks good Ray!! Good way to pass some time. Wife is pushing my to get our dogs nuts cut. So far vet said no need unless his behaviors change. I think he’s happy about that lol.

Poor Bob...hopefully he will be feeling better by the end of the week. That pasta looks like it was a real nice meal! And I cant wait to see those ribs when they are finished! I totally agree on the meat sauce. If its meat sauce there better be plenty of meat! Lol!

A bitch came into heat somewhere within Bob's sense of smell a couple weeks back. I had no intention of getting his nuts chopped off Jcam, but he was whining non-stop, licking himself non-stop, and humping my wife's pillow while she was asleep. Poor little guy didn't know what the hell was going on, but I won't have to worry about that in the future, or any of the myriad of testicular issues that can arise these days. I had a wolf/shepard hybrid male when I was 18. Old Woofer kept his package intact until the day he died at 13 &1/2 years old. They just don't make 'em like they used to. RAY

Bob will be fine, he's already sparked back up and trying to be as much a pain as possible Travis, banging the back of my legs with that dammed cone. I'm thinking I'll have some pasta for brekky then fire up the SQ36, no coals, no wrap, straight hickory. RAY

:emoji_disappointed: Jarred sauce with all that work you were doing other then that looks great.Post them ribs
Richie

Looks great I'm with you if you are going to have meat sauce have meat sauce. Yea Richie but some jar stuff not to bad after you doctor it up.

Warren

Pasta looks real good Ray! Nice job on that! Good luck with Bob toss him a few scraps of those ribs and maybe he will quit banging his cone into your chair haha. Enjoy the Rolling Rocks wish I was joining you.

Everything looks good Ray!

Those cones are perfect for finding the back of your knees.

It's actually some pretty good sauce Richie, usually sells for over three bucks a jar, I had a bunch in the pantry I picked up for 99¢ apiece. Hell, I can barely find the cans of crushed tomato for that. After cooking down for ten hours it's thick and meaty, works for me.

Should be a fine day for firing up the SQ36, it's 34º here right now with a forecast high of 53º. I'll have to wake up a bit and think about breakfast, a major player on the team is lobbying for lox and bagels, hard to argue with that. I've got a couple of hours before I have to spring into action, haven't had a decent nights sleep since my last cigarette about a month ago. RAY

So about 9:15 I get the SQ36 fired up with some hickory splits

Ten minutes later Bob comes out and breaks his surgical cone, we rush the ten minute drive to the vets, get a new cone, $28. We're back by ten and there's a decent bed of hickory coals so on goes the rack. I'm keeping the fire in the 265º range and just starting to spritz around 12:15

Maybe a brewster and some TV while I await the next trauma. RAY

Yeah, there's no going back now Richie, we've both quit. What a day, everyone at our house will be real happy when Bob's cone comes off. The vet gave Bob a doggie downer to calm him down, long story short, that led to him crapping on the kitchen floor. No more drugs for Bob.

I was in and out all day, spritzing, tending the fire, and seeing if Bob needed to poop. About six hours in I started running short on hickory, beer, and patience so I wrapped the ribs in foil and finished them in a 250º oven. I pulled them out when the IT hit 199º, looked OK to me so I sauced the rack up with some SBR

Twenty minutes later I was sitting down to some fine pork ribs, tater salad, and creamed spinach.

I've got a ton of leftovers for this week, need to stock up on more beer tomorrow. With a little luck Bob's cone will come off Saturday around noon and life can start getting back to normal around here. That's my story and I'm sticking to it. Thanks for looking. RAY

Damn Ray...ribs look real good but that pasta is to die for!! I just LOVE pasts, especially with any sort or a red sauce, preferably a bit on the spicy side. I'd certainly down a plate or three of that stuff!!

Thanks Robert! I've been enjoying it, maybe a little too much, gained about five pounds this week. We go in this morning to see if Bob can shed his cone and start exercising again, it's been an ordeal. His daily Buns of Steel workout gets me up off my butt and out the door too. RAY
