It's that time again. Every year I put on a large barbecue for family and friends. This year instead of trying to cook/smoke everything the day of, I have started early pork shoulder and in the smoker at this time.

Brisket: Only a flat due to packer was bad.

Looks great. Is that a MES 40 you're cooking with?

What did you use for fuel? Chips? What flavor?

I would like my brisket to look that good.

Yes it is an MES 40. I am using apple pellets in my AMNPS. The brisket was cooked until 190 IT.

Here are the pictures of the brisket after resting and sliced and ready to reheat tomorrow.

Me and Mrs. had to do a taste test. I believe this rates as one of the best that I have to date. Pork shoulder resting now will pull later this evening.

Sounds to me you are going to need some Sou Chefs. Delegate , have someone do the cooking of the ABT's and Wings , while you are getting the Ribs and Fatties to perfection.

Of course the Missus will do the Beans,Tater Salad and McSalad and running and...LOL

Have fun , and the "foreplay" is a good idea for a biggie like that ; and ...

OK, cookout finished. Man am I beat. As far as needing a Sous Chef yes it would of help. Cooked way to much food. Everybody really enjoyed and started asking about next year. Here are some pics of the food and goings on.

Next year I think I will have to designate one person just to get pictures of all the food that was cooked. I got so busy I forgot to get pictures of the ribs, fatties, ABT's, and beans. maybe next time. Everything turned out great. Thanks to everyone here for sharing all the information it really helps when it comes to these big gatherings.
