AMNPS seems to be burning way too fast

It's actually a pretty standard recipe from comparing to what other's have passed on me, except for yours. Small batch here that I increase ingreds for more. I just wrote this down back in the early 70s when I left down there.


3 lbs. pork butt cut up
1 lb pork liver
3 cups raw rice
4 medium onion
2 bunches of green onions
couple tablespoons of minced garlic
4 or so tablespoons of chopped parsley
couple tablespoons of salt
cayenne to taste
couple teaspoons of black pepper
couple teaspoons of white pepper

cook the butts and liver in separate pots. simmer till done. save some pork stock to add a bit to mixture but toss out the liver stock. grind everything up and stuff into hog gut casing. (LOL.. rice has to be cooked first, but figured you knew that)

indaswamp has it right: sawdust burns a LOT faster than pellets, at least twice as fast in my experience. I get three hours/row with pellets, but not much more than one hour/row with dust.
 
Set the smoker to 120 F.... Form a pellicle on the meat..... Light a full AMPS with dust... In 4 hours you can crank up the smoker temp...
