Afternoon, y'all! I'm from Alabama and am rocking a new OK Joe Hondo offset. I got started smoking meats on a really cheap offset in Texas back in 2018 and still run mostly Texas style BBQ - just with a bit more "Alabamian" wood now. I've been reading the forums for a while and figured I'd go ahead and hop in!
For the smoker itself, I'm planning a stack extension as well as something to lower the stack intake to grate level. First thing will be some gasket and latches for the smoke chamber lid. If anyone has other recommendations for the OK Joe Hondo/Highland (they're essentially the same, I've read), please let me know!
