Afternoon, y'all! I'm from Alabama and am rocking a new OK Joe Hondo offset. I got started smoking meats on a really cheap offset in Texas back in 2018 and still run mostly Texas style BBQ - just with a bit more "Alabamian" wood now. I've been reading the forums for a while and figured I'd go ahead and hop in!

For the smoker itself, I'm planning a stack extension as well as something to lower the stack intake to grate level. First thing will be some gasket and latches for the smoke chamber lid. If anyone has other recommendations for the OK Joe Hondo/Highland (they're essentially the same, I've read), please let me know!

Hey hoity, when I say Alabamian wood, I mean based on commonality not exclusivity. That being said, I mean a lot of Hickory which grows like weeds around me. I love Pecan but I think of that more as a Georgia wood. I have a hard time finding folks trying to offload Pecan.

When I think of Texas style BBQ I think of a lot of Post Oak/White Oak wood.

Welcome to the forum. Another Alabama member here. I live in Shelby county. I have a 20 some year old Oklahoma Joe Longhorn and use a 3" elbow from HD to bring it to within an inch of grate level. I use mainly oak for brisket and hickory for pork. Splits are 8" to 10" long , 2" to 2.5"/3" across. Try Feldon's BBQ calculator for your stack length. Just Google it. It worked well for my pit, your mileage may vary.

Here's one for you - where I'm from here in SC if I smoked a brisket with 100% pecan you would swear it was post oak. Oak here (post or white) really does not taste like oak from Arkansas or Texas. Pecan is my favorite local wood (mixed with cherry)

I'll put a dollar on it being "What is hickory and red oak, Alex?"

I have purchased my wood from Alabama Firewood Producers off Hwy 11 in Pelham for years. They process red & white oak, hickory and pecan. Their main customers are BBQ joints and restaurants for which they palletize, wrap and deliver wood. I buy the offal which are splits about 12 to 18" long. When you drive in the gate there is a big pile of oak on the left and hickory on the right. Scale in, load, scale out. Sells by the pound. Last time I filled the back of a Toyota Highlander with hickory splits for $36.00. I use a cutoff saw to get the right length and a Kindling Cracker for width. They are open M-F (Friday until 1) and only take cash.

This is awesome☝🏻Man I wish I could find something like this. Hardwood just doesn’t grow like that around here. Fruit trees are pretty much all we get.

Of course if you ever want to smoke with pine….we’ve got that 😉.
