8 lb Boston butt been smoking for 13 hours at 225-230 deg. IT is 182 deg right now. If I go to bed and let the butt continue to smoke at 225 do you think there’s a risk of over cooking it?

If I put it in foil and into a 190 deg oven and leave overnight is that any better or is that just worse?

This is all due to poor planning and a late start this AM. Thanks in advance.

I would let it go til the IT is close to 200 and then put it in a cooler with a bunch of towels. I typically like to get my butts done early so they are usually in the cooler close to three hours but I've been told they can rest much longer.

Maybe set an alarm a couple hours from now and check the IT. If it's close to 200 throw it in the cooler for about 4 hours or so. Then pull it and put in a slow cooker to keep it warm until serving.

Wrapped and in the oven, 150-160, will hold all night and day then fall apart when unwrapped...JJ

You may have to lose a little sleep but I think William has the right idea. Get up in an hour or 2, if the IT is where you want it, foil it, wrap in towels and put in a cooler, then get back in bed. I’m sure it will be still be hot and ready to pull when you get up. Good luck. Take some pics.

Like JJ says in the oven is the way to go, only most ovens only go down to 170, but that will still do the job!
