Advice Needed for Super Sunday Super Wings

Hey Guys,

Hey guys I need some advice. Surprise, surprise, smoked wings are on the menu for tomorrow. In order to get really crispy skin, I have been thinking about finishing them with a quick dip into some hot peanut oil in my CI after I pull them off the smoker. Wings do not seem like they would lend themselves well to cooking by IT, and I am not sure about length of time for the smoke. If I cook them between 300-325 how long of a smoke should they get. They are normal sized wings that have been brined over night and not been separated into pieces. Thanks and Go Atlanta!
 
There are as countless ways to do the wings on this forum as there are stars in the sky.  My take:  if you want to flash fry them to crisp them up post-smoke, there's nothing wrong with that.  Just don't sauce on the front end, as the sugars in them will burn and you've got a bitter bird to deal with.  Smoke with spice--or naked--that won't burn headed for the business end of a screaming hot grill or deep fryer, flash them there, then toss with sauces or spice after the fact.  Here's a chart for cook times from Perdue, who knows a thing or two about birds:

I like to smoke mine for about 1 hour 20 minutes at 250, then onto a screaming hot grill for a couple of minutes on each side to crisp them up.

Then a toss in half Frank's wing sauce & half melted butter.
