I have some beef cheeks I plan to smoke tomorrow to make tacos that evening. How long should I smoke them before putting in a braise for the rest of the cook? I was thinking of something like 200 degrees for 3 hours or so to get some smoke on them, then braise at 250 for about 5 hours. Sound about right?

What about seasoning? Light seasoning? Heavy? I will be using one of my beef rubs like Holy Cow or Voodoo.

This should give you some pointers...
