So do i always have to buy Bactoferm products? NO

Here are a couple of the ways im going to introduce Lactic Acid into TWO, 2lb batch's of sopressata.


The powder will be added in the same way Bactoferm is.

(yes i do have pH strips 3.9/5.7 & 4.9/6.9)


Here is the other way i will introduce LA into another 2lb batch.

I will need 1 t of yogurt to 1/2 cup distilled water and 1/4 t dextrose and let sit for 12 hours.

 
Well........ I think I need a new binder.... One for nepas' alternate sources for stuff.....
