yum yummm.... a quick question... they look like they are still whole... did you stuff them with anything ? ... maybe tell us a little bit about how you did them ?

Thanks guys, they are pretty good.  OK, Jck 07, They are whole, I just split the peppers and removed the seeds, stuffed them with "little smokies" that I had wrapped with  a slice of cheddar cheese, wrapped a strip of bacon around the peppers, put them in the smoker at 250*, for 2-1/2 hours.  Came out pretty good.  The real recipe says to fill the pepper with a "cream cheese", but I didn't have any so I used a slice of cheddar.

 If you do some, good luck.  Only draw back I found is it takes a little time to de-seed the peppers.  I'll do them again but with different cheese, maybe smaller peppers..

Looks really good.  I'll have to give these a try when I finally build my mini WSM.

I grow jalapeno peppers every year because they are so prolific and boost my ego.  I'm the only one that eats them and I make them all into poppers.  Split, deseed, fill with cream cheese and wrap in bacon.  I make up a bunch and freeze them to eat all winter.  The trick to freezing them is to freeze them on a cookie sheet first, then when hard put them in bags or plastic containers.  I put them on the grill when still frozen. 

Here's some that I grilled up a while ago.

Great tip Fritz, that's exactly how we freeze and vacuum pack lots of the little goodies we have as leftovers!
