hi guys , i'm sure there are a ton of people who , like me , have wanted to roast a whole pig but there was no way i was digging up the backyard or buying a $2000.00 unit that could handle a pig . i had heard about " la caja china " the chinese cooking box and figured i'd at least check it out . i did some research , checked out a lot of youtube videos and finally decided this was going to be the answer " i was right " this thing is incredible . i did my first roast yesterday , a 28 lb. pig and it took 3 hrs and 45 min from start to finish. the unit itself is around $300 bucks and really easy to use . the pig came out great super moist and tender. i'm not gonna get into a long narration on the cook itself but for those of you who might be interested just google LA CAJA CHINA and check it out, this thing is fantastic i will have pics up later today ( i hope )

wow, either this is a great unit...or you work for them...just messin with ya! but I'm looking forward to seeing pics and a more detailed process also. I googled it, but I want to see how you did it, because I planned on building a hog cooker this winter, but maybe I've found a cost effective alternative
 
berninga, i'm really bad when it comes to TRYING to post pictures , i don't know what i'm doing , i'm an idiot . but i'm trying . if you want to see this unit now, just go to youtube and put in la caja china and hit the search button and dozens of videos will come up . the unit itself is really nothing special , all it is , is an open top plywood box , yes i said plywood , 4 feet by 2 feet and about 18 inches deep , BUT it is metal lined on the interior. you just put the pig inside the box and then there is a metal tray that fits snuggly on top to seal it off. then all you do is put charcoal in the tray and lite it off. you add a certain amount of charcoal ( depending on pig size ) in 1 hour then more charcoal after another hour and repeat one more time. then you have to turn the pig over ( real easy to do ) for the final crisping of the skin , about 30 or 45 min ,depending on how crispy you like it. so you can see the whole process takes 4 hrs or less. they make a couple of different models the one i got will do up to a  70 lb pig

I forgot one that didn't load. the good thing about these cookers is they put instructions on the side of the box. I usually build my own smokers but at the of this unit , you can't go wrong

Maybe you need to bring your buddy back over to help with the pics again..... Your not an idiot, just inexperienced. With 122 post you should know by now threads are useless without pictures.....

You'll have to bare down and figure the picture thing out so you can satisfy our obsession........
