Given the time calculation into concideration (meaning to 1.5-2 hrs per lb. @225 ) , a 10lb. but cooks in appox. 15hrs. (give or take some for long or short stalls). The probes will guide you to temp. Watch your temps .and let her coast and you'll be fine.
As long as they are close in weight , you can do multiples easy , and the time (as long as you keep temps. well ) figured .
A lot of patience is needed , opening the lid slows the process of cooking due to the heat loss when open.
