Some pictures below but it’s just not like anything I’ve tasted before - incredible tenderness and richness. Would I buy another? - nope. Am I glad I got to experience it one tho - yep. The burnt ends were the single best bite of beef I’ve ever had. Also got 3 mason jars now of A5 tallow which will be used heavily.

Looks great. It has an unusual Shape for a Brisket. Looks more like a Whole, Untrimmed, Beef Tenderloin...JJ

Yeah I butchered the trim JJ, they clearly cut them different in Japan snd this was a 30lb cut lengthwise. It was all so marbled hell I couldn’t tell the flat from the point haha. Ended up only removing half the point and then once the seem became more obvious later in the cook removed the rest - so that’s why the funky shaped. Know you’ll appreciate the umami - holy cow that’s all I can say.
