Was another busy weekend. Getting cool out and all the fall festivals are in full gear. Great time of year, except time on the smoker lessens a bit with all the running. Not to worry. Several recent posts on Tri Tips got me wanting one again. They are definitely one of my favorite meats, so I picked one up Friday to slip in when I could...which became Sunday afternoon. Not to worry, since these things generally cook pretty quik. So, on to the fun.....


Picked this up at my local butcher shop. Sale for $4.99/lb, mostly trimmed and already rubbed with a very favorite rub for these. I think they call it Pappie's. One they make themselves. This was just barely south of 4 lbs

Forgot to get a pic of the start, but here she is just being moved to sear mode. Cooked this at about 230 average temperature. Took just under 3 hours and moved to sear when it reached 135 degrees. Cooked on the Weber, and had a pan of hickory and apple mix wood chips.

Finishing up the sear. Love smelling up the neighborhood.

Pulled from fire and resting comfortably. End result after cook, sear and about 1/2 rest was an internal of about 148. Pretty much a favorits of the family. Fat end still has some rarity for me and a boy, smaller end close to medium well for the missus and another boy. Cooking up some italian macaroni and grean beans to accompany this.

PLated up and ready to enjoy. Have to admit, this was one of my better Tri Tip cooks. Very juicy and great flavor.

Oh, and Saturday night I had put together another of my favorites for this time of year. Something pumpkin!!! This wasn't my own recipe, but is a favorite...Pumpkin Pecan Squares. A great ending to a terrific dinner.

Nice looking tri-tip! I haven't seen them in my area other than cut up in smaller 1lb sections but I'll be on the lookout now :rolleyes:

Thanks, Waterrat. Be sure to get em when you can. I usually have at least two on standby in the freezer since they are so quick to cook.
 
I'm mildly disappointed.
I was hoping for an ice cream Sunday.... :rolleyes:

Wonderful! Looking great! My Wife's idea of a perfect Tri-Tip.
(I over cooked our last one. :oops: )

The Pumpkin Pecan Squares look fantastic!

Between Dutch's Wicked Baked Beans, and your Pumpkin Pecan Squares, I may have a couple of hits for the Family Thanksgiving get together.;)

Thanks Sonny. Ice Cream Sunday is great, but it got a bit cool and damp around here, so ice cream was far from my mind, lol.

Those squares are great and very easy...I guess it doesn't break copyright laws to post a link. Nothing but a Taste of Home recipe I have had for a long time. Pulled attached link from my recipe box:

Brings up a bit of debate (although nothing as epic as @bearcarvers MW v Mayo debate)...Whipped topping or not on pumpkin!!! Have at it. I chose not.

Dang, everyone keeps posting great looking TT, and I can very rarely find in the grocers around here, and when I do it's priced out of this world.

Wife sez Pumpkin anything is expensive to make. :oops:
(Such a spoil sport... :( )

I think canned whipped cream on the side for those who'd like it.
I prefer not, myself. Usually anyway. :rolleyes:

I remember as a kid the grown ups saying Tri-Tip was a less desirable piece of meat.
It probably all gets pulled off the truck before it gets to Vermont, Chris.

Jeff, my pics are taken on an old Android Moto Z smartphone.
If I can get a good pic, you can too.
It's all about light, stability, angles and quantity.

Subdued natural light is my favorite, in the shade on a bright sunny day or cloud in front of the sun. That, or turn on all the lights, light from many sources from various angles.

Angles, I'll take 3-4 pics each from angles that look good to me.
I get down low and avoid high overhead pics looking straight down.
I'll turn the plate around looking for the best angle/presentation.
If something looks good I try to repeat that angle throughout the cooking process.

Stable platform, I use my wrists or elbows as bipods, or just hold real steady by tucking elbows to body.
Makes big difference.

Quantity, I take multiple pics of the same shot, and various angles then I choose the best ones.

And yes, I stage stuff and use props.

Update - Just a quick pic from last night. One of my favorite ways to enjoy meat leftovers. Lots of fresh veggies and sauteed with the meat (Beef, chicken and pork).... added some air fried taters and yummy!
