Today I smoked the entire Memorial Day feast. We had baby back ribs, a side of wicked baked beans by dutch, and smoked corn on the cob. I made a few modifications to the baked beans recipe which was well received. The food was awesome. The Mrs was very pleased and is looking forward to the leftovers. I skipped foiling the ribs this time and I liked them better than foiled ribs.
Baby back ribs ready for mustard and Jeff's naked rib rub...
All rubbed down, wrapped in saran wrap and ready for a 24 hour refrigerated nap...
Ribs on the WSM...
Wicked baked beans ready for the smoker...
Corn on the cob joins the ribs and beans...
Bad weather coming in...
Had to quickly set up the tent to keep the rain off the WSM...
A plate for the Mrs....
And a plate for me...
Thanks for looking!
