I have a guy with some fresh cherry wood. Would I be ok to use it or should I let it set a while? And for the second ? Just curious who cooks beef ribs? I have only cooked pork ribs an was wondering about beef ribs.
The cherry wood should be set aside for 4 months or so to let it dry before smoking. I have read of some using freshly cut wood but I think the general rule is 4 months minimum.
They can be smoked like spares, 3-2-1 would be good starter times. Some don't like to foil them, others do. Experiment and then let us see the results with Q View.
If you cut it to size for a stickburner and split and stack it it will be ready in 6-8 months. If you cut and split it into fist sized chunks, more or less,they shold be ready to use in 8-10 weeks if you keep them in a dry place, maybe quicker if it is a warm dry place.
