Hi everyone.  My husband bought me a MES for my birthday last fall but I just got to preseason it today.  Planning on doing venison ribs tomorrow while he is gone snagging. 

This will be my first attempt at smoking and his first attempt at eating deer ribs.  I've read many of the posts this evening and have learned a lot already.

Nice site with real friendly, helpful people. 
 
Welcome, i have the MES 30 myself, made a ton of great food in it. This site is a great resource, just try some of the weekly newsletters , the directions are easy to follow and you will love the results. If you dont have a meat thermometer yet, get a maverick they are a key tool in your success. With an MES you will need to add chips every 30-40 minutes, this is what i do or you can buy an AMPNS (i have one but dont use it). Be careful not to oversmoke, less is more in my opinion, especially with chicken. Have fun and post pics of your results.

Thanks for the welcome.  Ribs are in the smoker and my stomach is growling!!!!  Potato salad and deviled eggs in the fridge.  Can of baked beans on the counter....

Congrats on the smoker. Deer ribs are pretty lean  may want to throw on a couple of other thing too
