Hey Y'all
It's been a minute. I've often mention a market down the street I've referred to as the "Latin grocery"
Also called Broward meat and fish. They recently posted on their page on Facebook, in broken English, a meat cutter placing slices of what he called boneless short rib in containers for sale/ display. He also .mentioned that some refer to them as Denver steak. My interest was piqued so I had to check it out. I had heard of Denver steak in passing as an "economical" cut. I went to check it out. Far from economical at $16.99/lb but visually appealing I got a package.
Being a busybody, when I got home i decided to Google AI the name on the label in Spanish. "Tiras Asado Sin Hueso.
translated to English. I won't waste space here with th result.
Anyway, thought I'd share. Hope they're as good cooked as they look. Always fun meat shopping here in N Cuba

seems like it's got to be pretty good with all that fat. Let us know how it turns out!

Those look great ! I had them for the first time when I broke down a chuck roll . It comes out of the shoulder . Not sure where he gets short rib from .
Actually sits next to the chuck eye .
Top 2 are chuck eye , bottom is the Denver .
You're in for a treat .

Nice beef, J3. Post up your cook for the you and the better half.

I'll do the same as @chopsaw and get a chuck roll to breakdown once I get some freezer space later this month. I'm planning to make a pastrami out of the roast. Hoping to make Reuben egg rolls in a couple of months.

Sub primal comes from between the shoulder blade and ribs so with the translation uh difficulties I guess it is boneless short rib.

Right , that's why the chuck eye steaks are so good . Sits against the rib section . I just did some checking on the website I use for this stuff . It does say " can be cut into country style boneless ribs " .
Denver steaks would normally be shorter / trimmed of the tag end . The way Johns are cut , would be a country style rib . I spoke to soon I guess , but I'm self taught .
Top veiw of the chuck roll . The bottom center section is where the Denver comes from .
