Hey  farmer next time you do one crank it up to 350* plus.  That's how i'm doing my turkeys this T Giving as well... you'll love  the turkeys.

Heck yea it will do 350 easily...it'll get go well over 400, just start with more lit.   3/4 of the basket unlit and the rest lit..it'll get hot quick.

You sure know your searing level sure will...lol      I've never tried to get the smoking level up that high.
