I honestly have but here's my dilemma. I have SO many things I'm doing now I just don't know that there's room on the plate for another one. I did bookmark this and thank you for sharing it though. There's a great chance I'll be making it some time soon. Knowing me though, i'd want to get creative, at least to a small degree, with some different flavors.

Howdy Jimmy...again. Got a Q for you sir. The process to make the mozz that Al posted calls for citric acid, which I don't have any of. I do however have encapsulated citric acid for sausage making. Is there some way that I can use the ECA or should I just plan on getting some citric acid when I decide to make this stuff? I have a ton of it to burn through before I need more but I've decided that I'm going to make some when my current stock starts running low.

Robert, I'm not sure if encapsulated and regular citric acid measure the same but I see no reason the encapsulated won't work. The encapsulation will break at 135°F releasing the acid. It is regular Citric Acid encapsulated in Maltodexrine...JJ
 
Man you guys are killing me with the griddle cooks. Wonder if I could sweet talk the wife into letting me add another piece of cooking equipment onto the patio.......?

Dang how do you have so much time on your hands to do all these great meals. All look just great.

Very much appreciate it Warren!! How do I make time? It's pretty easy but a bit crazy by most people's standards. I get up at 3:30 in the morning, start work at 4:30, and rarely have more than just a couple hours of work per day to do. That as often as not puts me home by 7:30 or 8:00 in the morning and gives me all day to think up weird things to cook :emoji_laughing:
