I have a 20 # packer in my fridge ready for smoking on Friday. I would let you get some more practice in so I could get some extra lake time in. Looks great on my screen and hope it tasted just as good. Great job.

Looks wunderbar. I really need to add that quantity of rub to mine next time.

The seasoning was great, that Heath Riles beef rub that was the foundation. It has a little chili powder, garlic, S & P. then I added some kosher salt and chunky black pepper.

It could have used a touch more salt, I like the salty bark that comes on my favorite brisket that a local pop up serves.
(But man, are they ever proud or their brisket, price wise.)

A few more attempts, and a little tweak here and their on my process, and I won't have to pay their stupid high prices ever again.

What I really need to work on is my wrap temp and timing of the rest, I pushed the rest time out a little longer than I would like to. I'm thinking that is why the flat got a little over done. It was totally eatable, some people preferred it over the point slices, but to me it was a little to tight on the pull test, and a touch dry.

All and all I was thrilled with the results, and love the fatty leftover slices on those Hawaiian rolls, with a touch of BBQ sauce, and a couple bread and butter pickles on them, along with couple scoops of Bush's canned baked beans on the side.
Good stuff....Yum!!!!

How was fishing?

I haven't made it out this year, which is super rare for me.
I'm thinking about going out for Yellowfin tuna, Mai, or Ono while I'm in Hawaii, if the bite is on I most likely will go. My freezer is getting kinda low, and could use a fresh batch of fish to top it off.

How was fishing?

Was the last day of red snapper season so we went. Unsettled weather had us jumping around inshore dodging storms until 12:30pm. Weather finally laid down and the WNW winds smoothed out the seas so we made a decision to poke our head out of the pass to check...yep, flat....so we made a 14 mile run to a wreck. Got the limit in less than an hour, and back at the the dock early. Just had to wait out the storms...but turned into a good day.

Also passed some floating grass that had 2 triple tail on it,,,both nice fish,,,but neither one would bite a dead shrimp. Needed live. Oh well...
