A couple days with Opa

  Well after being a member here and reading many articles, recipes, and peoples stories, Here is on of mine with quite a few recipes from SMF members and their inputs, 

 My wife's dad whom we all call Opa, came here as a young man in 1953 from Austria. He has over the years told us stories of growing up as a child until he was 20 and left for Canada. He has only made it back to visit his last 2 sisters twice in the last 10 yrs but now due to his ailing health he has memories. A story in particular I was reading here and hit home to make me think. Opa is always talking about the old country sausage and of course beer from home that he doesn't get, So why not make an attempt to try make some for him and we thought lets get him in on the fun. So here's a few pics of the festivities...

We ground pork, Some venison we were saving and some elk 




 Here we made some Romanian sausage called Mititie with some friends as well.



 Supper Monday night, 1 with Jeff's rub and 1 with our rub,

Tuesday we made Knockwurst, Kasekrainer, Beirwurst, Weisswurst, and Bratwurst for the Old country style sausages



 Welll it was a long coup;e days, But Opa enjoyed it and was quite happy with the effort. I have to Give a huge Thx to Cranky Buzzard for the recipes and direction. Once Opa has tried them all and given us his reviews I will update them with the cooked up shots.

Awesome thread and memories AB. Point!

My grandpa has been gone 16 years this month and this brought up great memories of times spent with him at the butcher shop.

This is awesome!  My mom was a great baker and I wish I did it with her more when she was alive.  Its really cool that you helped your father in law reminisce about his child hood by way of food!

Great job making family memories and bringing back memories to Opa. This is something you will all ways remember and tell your grand kids. I wish my grand mom had written more down to past on just can't seem to produce her things without a recipe. Some of written recipes are so funny to read as they may say $.02 of this or $.05 of this having no idea what that amount could be. Great to see a family working together.

Man you sure had a busy--and productive--couple of days!! Sure great that you get along so well with your father-in-law. He'll remember with a lot pleasure the time you spent with him and the time and effort you invested to help him recall the joys of his youth. Nice job there.

And. It sure looks like you made a lot of great sausage--not to mention those 2 pork butts.

Moving the Mititei discussion here ...

I haven't done mititei myself for a long time. I buy them-we have a good selection of stores making them. They are pretty good.

The authentic recipe calls for beef chuck only (with some tallow or sheep fat). It seems a 140 year old pub in Bucharest came up with it.

But most people prefer the bastardized recipe: beef+pork+sheep/lamb.
The beef broth will ensure the product stays most when done. Club soda , a shortcut for the original baking soda+lemon juice adds volume - mititei shrink significantly during grilling.
I will look up the classic recipe if you want. You may surprise your friends. :-)

Thx Atomic, I have not found anything along those lines, I have looked at quite a few different styles and just found one with beef bouillon in it. It would be great to try the classic recipe.
 
Thanks all for the comments and points, It wasa good time, Talked with Opa this morning and he is tickled with his sausage so far. 
 
Now there, there is a Sausage Fest I'd like to be in the middle of. :sausage:

That sounds and looks like he is having a real good time, everyone else too.
Definitely memories to be cherished and looked back on with smiles.

I miss my Grandpa, I only knew one of'em.
Have some good times to look back on.
