Hello all!

So I started work in the UK and I sold all of my BBQing toys and now that we are back in the US I am prepping to start the fire again.

I have a DOA MES 30"...waiting on a replacement cabinet. It killed me that I couldn't start my first smoke with my Christmas present. Hopefully it'll be here before too long so I can get started.

Anyway, being from Nebraska I have had the pleasure of working with some of the best cuts in the country, it is slightly different here in Colorado so that will be a change. 

Toys:

Early 2000's Weber spirit from Craigslist - rebuilt with all stainless burners, grill plates, flavorizers, etc

MES 30" - currently and has always been out of commission - no power!

WSM 22.5" - Currently out of commission due to apartment living rules :(

I've developed my own recipes based off of other recipes. I take pride in my cooking and even more pride in my smoking. I have a strong palate and love tweaking recipes to make them my own. I'll be posting some of my recipes as I get back into smoking/grilling and would love to share the results. 

My father is a butcher and we produce our own sausage, brats, and potato bologna. A lot of our flavors are old German recipes passed on and tweaked.

Favorite meats - Tri-tip (grilled to the perfection of prime rib), pulled pork, spare ribs, brisket, chopped beef roast, and anything that sounds good. 

Just moving to the Springs I'm up for getting to know the locals here.

TLDR

Nebraska guy in Colorado that loves his smoked meat.

Is you dad a butcher back in NE?
Yes he is. I wish he was a butcher here, it'd make it a lot easier. Once we get into our house we will be getting a freezer so we can get our preferred meat here in bulk. Even after being frozen I prefer the cuts and selection over Albertsons, king soopers, etc.
 
have a friend here in CO that grew up there and still has a family ranch there they rent out.  He knows a rancher he gets it from and gets it processed there and then delivers it for us and and several others each year.
