a break was in order

due to the fact that the heat broke, the weather is cool,dry,& nice..a few business matters, and a nice overnight vacation to see our friends ALBANNACH play(not to mention a cabin on lake,no internet,no phone, & minimal weather channel)i'm back...(sorry folks- lol) and cranking up 1 of the twins tomorrow. simple small cook- 2 ft. stuffed fatty,rack of pork spares & wannabe fajitas(top round thind sliced for milanesa) whatever that is...but i'm doing it 3 different ways to experiment and fake fajitas w/ 2 styles. a new thread & pics to come tomorrow.

k here's some of the play by play & the wkend.
ribs splashed w/ guiness/balsamic/fiesta fajita,uncle chris',garlic & jeff's rub.
the paper thin fajitas "milenesa" cut top round- aka paper thin fajitas
the albannach concert & our wkend on the lake.fatty to come tomorrow w/ the rest.- will be a late cook.. gotta do bbq biz in town.

here's the rest of the pics. the ribs were 2-1.5-2 ribs & came out perfect(to me).added the wrapped juices to the spritz & sprayed everything. (apple,lemon,evoo,& guinness w/ the wrapped drippings & fatty catchings). the milanesa was tender & good- that stuff woyuld be perfect for jerky as thin as it is... doing that next time.nothing special today, just needed to smoke.

thanx terry. i woke up late & didn't feel like stuffing the fatty so it was allabasic smoke... aww man the weather is soooo nice....i may just burn wood to enjoy the deck again... it's "tiki time" again.
