Kroger Doubled my Money Back.. I am still mad!

Went to Food Lion and got a 10lb fatty butt 1.59lb - 9.00 kroget 2X cash back
I cut this one open before leaving the store. It smelled fantastic and sell by date 5/13/18

Actually got the joint in this butt

I put meat into a vacuum bag in a thin layer ...
DO NOT seal
Put in freezer to get solidish (1 - 3 hr) before grinding

While waiting for meat to firm freeze I replaced the VTEC solenoid in my 03 accord. No more oil leak and I have VTEC again!
Whew I was thinking it was bad oil rings.... 225K and rising!

Ok so I did my grind

I followed a Nepas fresh brat recipe with my twist
7lbs of fatty butt ground on Medium Plate
3 T salt
2 T sugar
4 T fresh parsley
2 whole eggs
1 t white pepper
1 t black pepper
1 t nutmeg
1 t mace
1 t ginger
1 cup cold distilled water
1.5 cups NFDM
.5 t mustard powder
2 large garlic cloves chopped super fine
1lb finely dice super sharp white cheddar to be added to meat right before stuffing brats

mix all ingredients well and add to ground pork. Hand stir and smear until firms up.
Cover and rest in refrigerator 24hrs...

This taste awesome!

So my daughters new dog got a smell of the goodness and wanted a front row seat

36 brats (2 small ones bottom left I count as one) ... casing hairs yes.. I know but I left them...

Started the UDS for an applewood hot smoke ... 320F at cooking grate

Heat jumped a bit on me but all was still very good...

Plated 4 for the webber

Smoked Brat with peppers and onions...

This is a do again recipe.
