After reading up on UDS's I'm ready get get building, my only issue is cooking space.  My current Brinkmann offset has a cooking area of 1242 square inches.  The only way go get close to this would be to have 3 racks in the UDS.  Of course the issue with that is I won't be able to get to the bottom racks to baste or add glaze.  Any ideas?  Pictures are always appreciated!

Hello jeffed76.  Out of desperation I made these while out camping.  I meant to improve them but they work so well I still use 'em.  Just 2 scraps of wood and a coat hanger.  Just hook in the rack and lift out.  A table each side of your UDS such as in photos themule69 posted and you are set.  Good Luck.  Keep Smokin!

One more question mule, what are the orange plugs made out of?
I took a 1/8" pipe coupling and cut them in half. Then I used 1/8" pipe plugs. I painted them orange so I wouldn't loose them.

Then on the side of the shelf I welded 1/8" cut in half couplings so I would have a place to store the plugs when I had that plug out.
