Good evening folks! I been a lurker here, thanks for all the valuable info!
I've got a UDS I been using, but had a 500 gallon tank waiting to get built.
Then my daughter decided to get married this summer, so I thought perfect opportunity to use a big smoker. Well time got away on me and here it was 3 weeks before the wedding and I hadn't started building yet!! got busy and today I did my first burn to season it! tomorrow I want to test cook, and beginning of next week put on 350 Lbs. of pork shoulder to serve on the weekend!!! so wish me luck and give me any tips you have!

Well the smoke went well yesterday, for the most part. Did some ribs and a pork butt. Tasted good, so thats the main thing! Maintaining an even temp was not mastered yet, had a nice wave pattern on the graph, from 200 to 250! But I figured I maybe get the best of both worlds, cause some seem to like it low and slow, some say crank it up, so I did both!

Hey Thanks! I am actually doing the big smoke today! Couldnt hardly fit 32 - 10 lb pork butts on there! They were pretty tight together, so had to rotate them to try to get all sides! seem to have hit stall at 155f, not sure if I should wrap or just wait it out...I've usually just waited it out, but I did trim more fat this time...

That's impressive to say the least. Nice fab work on the box & stack. Got any pics of the inside of your firebox?

You could always open a BBQ joint with a cooker of that size :)

I'm intrigued about the opening you have at the firebox connection...

I know you haven't had a lot of time for testing ... But I am curious about temps across the grate...

Thanks jack daniels! It was hard to get temp up under the grate, but hot on top. 250 - 300 above, 165 - 200 below. But I was expecting that....
 
Just getting started on a build. Collecting information, resources and providers of parts. What we had in mind if very similar to this. Any information you can provide on where to start reading up on builds, placed you got your CnC parts, handles and hinges from and anything you would do different?

Hey Pinhead! Have fun with your build! I spent a fair bit of time on smokebuildersu.com They have a lot of info. you can buy all the parts from them. But I drew up all my own parts, and have a local shop that does my laser cutting, so went that route. so far it's been working fine, although I expect ill keep trying to tweek it... with my ''vertical baffle'' I only get ''bark'' on the top, so would like to somehow get heat on both sides... Wondering if I'd put a rotisserie
with hanging racks, if that would be passing the whole piece of meat thru the 'jet stream' of hot air, if that would work...
