WNC, sounds like you're making full use it. I 100% agree that after getting it you just get that itch to make more and more sausage so you can continue to use it. For the snack stix, here's the link to the LEM stuffing tube that should work for using with your 19 mm casings.

As I said up above the LEM SS small  stuffing tube fits on the Northern unit and is nice and long to hold a lot of casing. I use the 19MM Collagen casing s from The Sausage Maker and I can slip enough of this casing on to do two 18 inch sticks that I bend in the middle to hang perfectly in my MES 40 Smoker.
