Mixed on Wednesday, stuffed this morning and in the smoker for an overnight cold smoke.

Cook in th MES tomorrow.

Added cultured buttermilk instead of ECA, will see how it turns out.
Tenderquick, coarse ground black pepper, red pepper, garlic powder, mustard seed, anise, fennel.

Weather not cooperating.... Rain and wind... Have them in the oven now, lowest setting is 170 degrees, that'll have to do !
 
Not my best, not my worse. Can taste the buttermilk though, gave it some tang.

Could have used a little more mustard seed and maybe a little more garlic powder.

It won't go to waste though.
