Up and prepping. Be-a-utiful morn. Do a cleaning burn then pork ribs on around noon. Gonna see if I can wrangle up a small beef rack for my daughter and throw on also. Need more coffee.
Got'm on late, no beef rib's, gave up. Somewhere around 8:00 i'll give'm a bend check. Flap came off at 2 1/2, chopped up in the beans and on smoke. Cherry and pecan. 235*
Rack didnt want to give it up, got a proper bend at 7hr mark. Glazed twice and pulled. Short of 8hr for the rack. A lot of drippings in the beans along with nice caramelization from the black strap I drizzled on top at 3hr made a nice texture (bean bark ?). Wife worked late anyway and did a walk on right when food came off. Left overs for the Eagles game tonight, off to clean up.
